There’s something about a sweet, frozen coffee drink on a hot day, and since the 10-day forecast in St. Louis is predicting highs in the upper 90s, I’m bracing with extra icy beverages.
As tasty as caramel is, there’s no true caramel in this recipe. This delicious frozen coffee drink is sweetened with deglet noor dates, which impart a rich, caramel-y flavor. When making this recipe, I prefer to initially blend all the ingredients except the ice to ensure that the dates get completely blended into the liquid, then blend in the ice at the end. If you have a high-speed blender like a Vitamix, feel free to throw everything in together and blend away.
- 4 deglet noor dates
- ¾ cup cold brew coffee
- 1/3 cup milk of choice
- ¼ teaspoon vanilla
- 1 cup ice cubes
- Soak the dates in water for 10 minutes, then drain.
- Combine the dates, coffee, milk, and vanilla in a high-speed blender and blend on high for about 30 seconds until the dates are well-incorporated. Add the ice and blend for an additional 30 seconds. Enjoy immediately.
